Cornbread is one of my all time favorites.
It pairs well with some of my absolute favorite foods, Beans & Ham and Chili. (look for these recipes in the coming weeks).
Add in that these combine cheese and bacon, as well, you got yourself a winner!
These cornbread muffins are super quick and easy to make. The base is a box cornbread mix, which I prefer Jiffy.
Jiffy is my go to for cornbread mix, I always get rave reviews when I use and you can't tell it's not “homemade”.
These muffins are perfect by themselves with a little bit of room temperature butter.
They also go great with my Homemade Cream Corn.

Ingredients
- 2 boxes cornbread mix (I prefer Jiffy)
- 1 cup of grated cheddar cheese
- 8 slices of bacon (cooked & diced)
- 2 eggs
- 2/3 cup milk
- 1 Tbs sugar
Instructions
- Preheat oven to 400° F
- Grease muffin pan
- In a medium size bowl mix, cornbread mix, cheese, bacon, eggs, milk and sugar.
- Let rest for 3 mins.
- Pour batter in greased muffin tin. Fill 2/3 way full.
- Bake for 15-20 mins until golden brown.
