Growing up us grandkids always got to pick our birthday dinner meal at Grandmas.

I never really cared what the main dish was, I just wanted some potatoes.

Whether mashed, baked, potato salad, or fries. Potatoes are my favorite.

Sometimes, I tried to request more than one potato dish!

These potato packets are super easy to make. There is no peeling the potato(my least favorite!).

You will need to cube the potatoes, roughly 1/2 -1 inch pieces.

You will need a piece of aluminum foil.

Make sure that you spray the aluminum foil with cooking spray.

Add the potatoes. I usually use about 1 medium size potato per packet.

This is the fun part! You get to customize each packet to your liking.

Once all the topping you will need to add the sauce.

To fold the packets, take the short sides and bring together. Fold edges over about 1/2 in.

Now take each end and fold up towards center.

These can be cooked on the bbq or in the oven.

These also make great a great side dish for camping. They can be prepped ahead of time.

Then keep refrigerated until ready to eat.

Everybody will be asking for seconds (or thirds) of these awesome potatoes.

There are so many variations that can be made with these.

You can even add in meat of your choice(cooked) and use as the main course.
