We have been in a grilling mode here lately.
We set up a fire pit and have been spending most weekends sitting around it.
This was a crowd favorite.
It could also be made in the oven or even in a pan on the stove.
Your ingredients include:
Chicken. I used chicken breast cut into cubes.
Green bell peppers.
White onions.
Pineapple. Either fresh or canned.
Teriyaki sauce. I recommend my Pineapple Teriyaki sauce.
If cooking on a grill, you will need some grilling sticks.
Cut all the ingredients into equally sized pieces.
If cooking on grill, added pieces in alternating order to sticks.
Salt and pepper the kabobs.

Before adding kabobs to grill, oil grill grate well.
While kabobs are cooking slather with the Teriyaki sauce.
Cook until chicken is done.
While kabobs are cooking. Prepare your favorite rice.
I like Minute rice. It's the perfect combination for this flavorful dish.

Ingredients
- 1.5 lbs of chicken
- 2 green peppers
- 1 yellow onion
- 1 cup of cubed pineapple
- teriyaki sauce
- Other:
- Skewers (if cooking on grill or in oven.)
Instructions
- Cut all chicken, onions, and bell peppers into evenly sized pieces.
- If cooking in grill or in oven add the pieces to skewers in alternating order.
- If cooking in pan on stove, add the pieces to a pan over medium high heat.
- Salt and pepper to taste.
- Cook on grill while adding sauce intermittently. Reserve some sauce for topping.
- If cooking on stove, cooking everything until browned and add sauce and cook until done.
- If cooking in oven, preheat oven to 350° F. Cook for 25-30 mins or until chicken is done.
- While chicken is cooking, make rice.
- To plate add rice, followed by chicken, pepper, and onions and then top with reserved sauce.
- Enjoy!
