As I have stated before potatoes are my favorite. They could be their own food group, in my opinion.
One of my favorite ways to make potatoes is potato salad.
We planted red potatoes this year in our garden and had plenty to use. So yummy! And the kiddos loved digging them up.
This only has 5 ingredients and salt & pepper. Super easy and comes together quickly.
You will need to boil the eggs as well. I recommend this method.
I cooked the potatoes on the bbq in tinfoil. These could also be boiled.

I like big chunks of the potatoes and egg, you can cut smaller if you prefer.
 I do recommend making ahead of time and storing in the fridge overnight.
Trust me the flavors will meld together and make it even better!
This is great for picnics, potlucks, eating by itself, or pairing with a meat of your choice.

Ingredients
- 12 med red potatoes
- 7 hard boiled eggs
- 1 1/4 cup mayo (I prefer Hellmann's)
- 1/2 Tbs Celery Seeds
- Salt & Pepper (to taste)
- Green Onion for garnish
Instructions
- Boil potatoes until soft.
- Hard boil eggs.
- Rough chop both eggs and potatoes.
- Mix potatoes, eggs, mayo, celery seed, and S & P.
- Refrigerate overnight for better flavor.
- Top with green onion.
- Enjoy!
